Recipe of the Month: Lettuce Be Different Salad

 

 

 

 

 

 

Ingredients:

¼ cup celery, diced (about one rib)
¼ cup carrots, shredded (about one)
¼ cup red onion, diced (about ½ small)
¼ cup tomato, diced (about 1 large)
2 Tbsp fresh dill, chopped***
2 cup mixed salad greens, any variety
¼ cup Balsamic vinaigrette dressing

Directions:

Prepare ingredients as described above. In a large bowl, add all ingredients except
dressing. Drizzle dressing over all and toss gently. Serve immediately.
Yield: 4 servings (½ cup each)
***Dill may be substituted with other favorite herbs such as basil or cilantro
